Tofu Steak Sandwiches!

What you need: 

1-2 tablespoons olive oil
2 slices whole wheat bread
1 (3 ounce) frozen tofu steak (I use Helen's Kitchen)
1/2 fresh tomato, sliced
2 tablespoons vegan mayonnaise (I use Veganaise), optional
1/2 avocado, sliced
soy cheese, sliced, optional
salt and pepper, to taste
ketchup, optional

What you do: 

1. Put the oil in a skillet and let it heat for about a minute. Put your bread slices in a toaster to toast. Fry the tofu steak for about 4-5 minutes (2 minutes on each side), or until golden light brown on the sides.
2. Prepare your sandwich. Spread the vegan mayo on one bread slice and the ketchup on the other bread slice (if using), and spread the avocado on top of either slice.
3. Slap the tofu steak on the avocado, sprinkle it with salt and pepper, and top with tomato slices. Put the last piece of bread on top, and enjoy!
This recipe is really easy, delicious, and has lots of protein, too.
