Open Face Italian Style Sandwich

What you need: 

1 loaf Italian bread
1 tomato
1/2 package of extra-firm tofu
1/4 package of baby spinach (fresh spinach NOT frozen)
vegan mozzarella cheese, shredded
non-hydogrenated margarine
basil oil
garlic oil
basil and parsley (or other spices of the like)
sunflower seeds

What you do: 

Pre-heat oven 350 degrees F.
Either in the morning before work or what not, but at least 3 hours before mix both oils and spices in a bowl. Then place tofu in the bowl (well drained, I use paper towels and squeeze tofu) and mush it with a fork so its crumbled. Make sure the oil has evenly covered the tofu. Wrap with cling wrap and place in frig.
Once marinated, place entire mixture in frying pan on high so it browns the tofu. Should take about 20 mins. Dont worry about the oil, once fried and browned scoop onto plate with a paper towel and oil with absorb into towel leaving you with wonderful and delicious garlicky tofu.
Cut Bread 1 thick slices. Butter one said and place that side down on a baking sheet. Sprinkle a little bit of mozzarella on the bread. Take the steams off the spinach and places leaves over mozzarella evenly to cover the pieces of bread. Do 2 layers of this. Then place a layer of the crumbled fried tofu. Slice the tomato and put two on top of tofu next to each other. Then sprinkle with mozzarella on top generously and sprinkle sunflower seeds on top of that. Bake for 20 minutes.
