Tofu Spinach Quiche
olive oil, as needed
1 medium onion, chopped
4-5 cloves garlic, minced
1 (10 ounce) package firm silken tofu
1/4 cup tahini
2 tablespoons soy sauce
1 tablespoon white miso
2 cups chopped frozen spinach, cooked and drained
4 scallions, chopped
1/2 package (5 ounces) vegan cheddar cheese, grated (Follow Your Heart brand works great)
pepper, to taste
several dashes paprika
1 prepared pie crust
1. Preheat oven to 350 degrees F. Saute onions and garlic in olive oil. In a blender, mix together tofu, tahini, soy sauce, and miso.
2. Mix the onion mixture, tofu mixture, spinach, and scallions together in a bowl. Add most of vegan cheese (reserving a little bit for the top of the quiche, if desired).
3. Add pepper and paprika. Spread the mixture evenly in the pie crust. Sprinkle remaining vegan cheese on top. Bake for 1 hour.

SO HOW'D IT GO?
The mix is even good before baking! I spent a fine amount of time taking spoonfulls of "samples" haha.
It was spur-of-the-moment baking so I didn't have any white miso, tahini, or the cheese, but it was still fantastic. And a quick meal to last a couple days.
This recipe is very good. I did not have tahini but made it anyway. Will definitely be making it again. Maybe add a few veggie variations like broccoli and red bell peppers.

I made 3 of these quiches at once, which took 2 packets of tofu, for the cheese I used Cheezly (cheddar style) which is all I could get here in the UK, but it doesnt melt in the oven, does melt in the microwave tho... weird.
That's so weird... since moving to Germany I haven't been able to get Follow Your Heart Cheese so I reluctantly bought Cheezly. Though I guess it was mozzarella style. I've used it on pizza and in quesadillas and it's melted beautifully! Now I think Cheezly is even better than FYH! But maybe the cheddar and mozzarella melt differently?

this is a great recipe, I did actually press the tofu but BE CAREFUL not to press it too much, I put it in a colander with some heavy plates on it but this dried it out too much and meant I had to add more soya milk when i mixed it all. but that's not your fault haha
I added some sweet red pepper to this recipe cos all the best quiches have red pepper. A good thing to do is to taste it while you are making it cos if it tastes good cold it'll taste good hot.

My friends (mostly vegetarians or meat eaters) said this was better than yucky eggy quiche it was delicious and also fun and easy to make. well done!!!
This was excellent. I love a good quiche and this was totally satisfying. However, make sure to press the tofu first, otherwise it will be more like pudding than quiche. I made that mistake with my first pie, but the second came out firm.
I made this last night and it was super good, even to my boyfriend who informed me that he is a "quiche connaisseur." It didn't really slice and serve as a quiche, and kinda fell apart. But who care what it looks like :) Very good recipe!
