Tofu Salad

What you need: 

1 lb tofu
1 to 2 garlic cloves (to taste)
1 carrot
1/2 celery stalk
1/2 small onion
1 tablespoon dijon mustard
1/4 cup vegan mayonnaise (I use Presidents Choice)
pepper (to taste)

What you do: 

1) Blend all ingredients in food processor. For extra firm tofu, use more vegan mayonnaise.
