Summer Tofu Salad!

What you need: 

1 block tofu
4 tablespoons organic relish (add more if desired)
4 tablespoons organic yellow mustard
4 tablespoons organic vegan cream cheese or vegan mayonnaise (I use Tofutti vegan cream cheese)
green onion, chopped
black olives, chopped
yellow onion, chopped
celery, chopped
carrots, chopped
garlic, add as much as desired
dill, add as much as desired
load with any other kinds of veggies! corn, peas, etc.

What you do: 

The ingredients for this recipe vary in accurate measurements; it's an eyeball recipe: you can't mess it up.
1) Mash the tofu until crumbled. Add the toffutti, relish and mustard, you may need to add more if desired. The desirable amount is that it will be sticking together. Tofu blocks vary in size so it's hard to give an estimated measurement.2nd: Add spices.3rd: Add all chopped veggies to the scramble and chill (recommended) or eat right away!
Good in wraps (garlic and herb) and sandwiches!
