Tofu-Avocado Sandwich

What you need: 

4 thick slices tofu (I use smoked or extra firm)
2 tablespoons soy sauce
4 slices bread (I use spelt)
1 avocado, sliced
1/2 cup vegan cheese, divided (I use Daiya chedder and/or mozzarella shreds)
2 tablespoons vegan mayonnaise (I use Vegenaise)

What you do: 

1. Preheat oven to 350 degrees F if using raw tofu. If using smoked tofu, you don't need any preparation. If using extra firm tofu, top slices with soy sauce, and put on baking sheet. Bake for 10 minutes, turning once. (You may cook longer, depending on how crispy you want it)
2. Lightly toast bread. Remove tofu from oven. Turn oven to broil. Place slices of bread on baking sheet, cover each with 1/4 cup vegan cheese. Broil in the oven on low for 3 minutes.
3. Place 2 tofu slices, avocado, and vegan mayonnaise on 2 cheese covered slices of bread and place other slice of toasted bread on top. Cut in half.
Enjoy! You can also top sandwich with additional veggies, such as tomato, sprouts, cucumber, lettuce, spinach etc.
