Tofu \

What you need: 

1 cup vegan mayonnaise
1 tablespoon brown rice syrup
3 teaspoons apple cider vinegar
2 teaspoons poppy seeds
2 (14-ounce) packages extra firm tofu, cubed
3/4 cup pecans halves
3 celery stalks, chopped
2 cups red grapes, halved
1/4 cup chopped green onion
your choice of greens, to taste
lime wedges, to taste

What you do: 

1. Dressing: In a bowl, combine the mayonnaise, rice syrup, apple cider vinegar, and poppy seeds. Refrigerate.
2. Cube the tofu and bake in oven at 350 degrees F for 30 minutes, or until golden brown. Leave tofu in the oven while it cools to make sure it firms up.
3. In a bowl, combine baked tofu, pecans, celery, grapes, and green onion. Drizzle with dressing; mix well.
4. Serve tofu mixture over greens. Garnish with lime wedges.
You may also serve it on bread as a sandwich. Very good!

I never eat vegetables when I was a kid, but now that I realize how important vegetables in our body. And now, I am a vegan for almost 2 years now and I love it. This kind of recipe just suits my taste.

So I followed the instructions here and made some sandwiches for some friends one of which is a vegan and everyone enjoyed them. My friends were helping me move some things to a small business storage unit before I head out on a well deserved vacation, Thanks for the recipe.


My wife and I are healthy eaters and try our best to teach our kids the value of healthy eating. Of course we tell them that tofu and veggies are brain food and it will help them get good grades in school and so far so good.
