Three Bean Beer Chili

What you need: 

1 can each: black beans
kidney beans
cannelloni beans
sweet corn kernels
1 large can whole tomatoes
1 medium white or yellow onion, chopped
1 green bell pepper, in strips
2 jalapenos or habaneras, diced
1 tablespoon cumin, or more if you like
1 1/2 tablespoons ancho chili powder
1 tablespoon cayenne pepper
salt to taste
1 to 2 bottles beer of your choice
1 to 2 cups water

What you do: 

Combine beans, corn, tomatoes, jalapenos (or habaneras) and water in a large stock pot. Bring to a boil. Add seasonings and make it a little spicier than you want the final product to be.
Simmer for an hour or so. Add bell pepper and onion and beer. Cook until you want to eat it.
Note: I tend to use hoppier beers in this recipe, and I go with roughly a bottle and a half, 18oz. I've also mixed two different beers in this, Stoudt's American Pale Ale, and Sierra Nevada Stout, which was good, but I'd hesitate to use only stout. Any decent India Pale Ale also works really well in this and brings out the spices and the hot peppers.

SO HOW'D IT GO?

I make chili all the time and I like to broil two or three pueblos for about 30 minutes first- dice them up and get the seeds out- then put them in the already boiling chili. Also peel the skin off too, they will be really soft and gooey.  They give the chili a really nice spice, be careful about the getting the seeds into the chili though, I did that once and it made the chili too spicy and I could hardly bear to eat it.    :-D

If you like soupy chili. I made this and I like it more hearty chili; this was watery. Maybe next time with less liquid and veggie crumbles.

How much is "one can"?? I boil my own beans. How many actual beans do I need in terms of cups?

the cans of beans i have are all 15 ounces, which works out to a little less than two cups cooked.
i think.

Great recipe! I left out the peppers and added garlic too. I just used some cheap Budweiser beer. It is still very good. I served it over rice.

This chilis rocks!  I omitted the bell pepper, added lots of garlic and red pepper flakes and used Widmer's Broken Halo IPA (it may only be availabe in Oregon?)  It turned out perfect!  Not too thick.  I served it with sourdough bread.  Thanks for a great recipe!
