Veggie Chili

What you need: 

5 potatoes peeled & cubed
4 large carrots, chopped
1 onion, minced
1 can of stewed tomatoes
1 small can tomato paste
1 can kidney beans
1 can chickpeas
any other veggies - I've used green peppers, cauliflower pepper, basil, oregano to taste
cooked rice to thicken if necessary
1 cup water

What you do: 

Put water, spices and veggies in a large pot and boil on medium heat until water is gone and potatoes are soft. Add tomatoes, paste, beans & peas - simmer for 25 minutes
