Thai Tempeh Pizza
4 ounces tempeh
2 large scoops peanut butter
1 cup soymilk
2 cloves garlic, minced
4 green onions
1/4 red onion diced
1/2 medium sized broccoli crown, or as desired
2 tablespoons sambal (red chili paste), if you like spicy
1/4 cup sesame oil
4 tablespoons soy sauce
Dash salt
Prepared dough for 1 pizza - use your favorite recipe
1) Slice tempeh into 1/4 x 1/2 inch pieces. Marinate with the garlic, soy sauce, half the sesame oil, and 2 diced green onions. Marinate for anywhere from 20 minutes to an hour. Prepare the pizza dough at this time
2) On medium heat combine the peanut butter, soy milk, sambal, and the rest of the sesame oil. Whisk gently until well combined. At this time add a dash of salt if you like.
3) Saute the red onion and broccoli until slightly soft and then add the tempeh mixture for about 1 to 2 minutes. Put sauce on pizza dough and tempeh mixture on top. Bake for 8-12 minutes. When finished chop up the last two green onions and sprinkle over the top.
