Hi, I was about to make Bryanna Clark Grogan's recipe for dulce de leche but it requires brown rice syrup.
Has anyone tried this recipe? I know dulce de leche is supposed to be sweet, but is there any way to cut down on the sugar?
Any good vegan desserts using the sauce?

I don't care for the powdered "milk" taste.  I haven't figured out a way around that, so I start with liquid "milk."  (Neither of these are my recipes, but I've had them for so long I don't know where they came from anymore.)

Sweetened Condensed Milk
I measure 2 cups of non-dairy milk (I use vanilla almond milk) into a measuring cup.  From that, I transfer 3 tablespoons to a small bowl and whisk it with 2 tablespoons of cornstarch / tapioca starch / arrowroot.  I heat the remainder of the milk and 1-3/4 cups brown sugar in a saucepan.  Once it's warm, I whisk in the starch mixture and simmer until it's thick.

Dulce de Leche
I add 4 cups of non-dairy milk (I use vanilla almond milk), 2 cups of granulated sugar, 1/4 teaspoon of baking soda, and 1/8 teaspoon cinnamon to a *large* saucepan (it foams!) and heat it over medium heat, stirring occasionally. After 15 to 20 minutes, stir it really well (it helps to take it off of the burner), reduce heat to low and continue to heat until thickened and is caramel in color, 45 to 60 minutes.
