Sweet and Spicy Tofu or Seitan

What you need: 

tofu or seitan
sweet chili sauce
tamari
oil

What you do: 

This is something I threw together one night when I didn't feel like cooking and it came together very quickly and was surprisingly tasty.
Press the tofu between two plates, with something heavy on top, to drain as much liquid as possible for about 20 min. Cut the tofu in cubes. If using seitan, cut into bite-sized pieces.
Heat some oil in a saute pan. Add the tofu or seitan and cook until it has browned nicely on all sides. Add soy sauce and sweet chili sauce, to taste. I did not measure so you will have to adjust according to personal taste. Since I like a little more kick, I added some red pepper flakes. Cook until the sauce has thickened a bit, a few minutes. Serve over rice.
If you have a little more time, add some ginger, garlic, diced onions and green bell peppers or broccoli. I would brown the tofu first, remove from the pan, add a little more oil, throw the veggies in the pan and saute until veggies are cooked but still a bit on the crispy side. Add tofu back to the pan and add the sauces. Garnish with minced spring onions.

SO HOW'D IT GO?

Thanks for this really quick and yummy recipe.  I was pinched for time so this was a great quick meal.  Next time I will add a few more veggies to make it a one pot meal.  Great over rice.

I would like to add a note to this recipe. The way I've been preparing this most often since posting this recipe is to coarsely chop a couple cloves of garlic, thinly slice half a small onion and saute this in a tiny amt of oil. Add tofu or seitan, sweet chili sauce, sambal oelek, and tamari or soy sauce and saute until the sauce thickens. Done!
