Super Sauteed Kale

What you need: 

oil, as needed
1 small onion, thinly cut crosswise
1 teaspoon crushed red pepper flakes
1 garlic clove, diced
1 pound kale, leaves cut into 1" strips
2 carrots, sliced thin with a vegetable peeler
1/4 cup sliced almonds
1 tablespoon toasted sesame seeds

What you do: 

1. Heat olive oil in large pan, add onion, red pepper flakes and garlic; stir for 2 minutes.
2. Add half of the kale, stir for 1 minute, then add the rest of the kale.
3. After 6 minutes, add the shredded carrots and cook 2-4 more minutes, until kale is tender.
4. Toss in almonds and sesame seeds.

SO HOW'D IT GO?

i really enjoyed this recipe because of the variety of textures and also the spicy kick of the red pepper flakes,!! I did not add carrots because i did not have them and i'm not that crazy about them. I will be making this dish often:-)

This recipe is INCREDIBLE! I made this for my carnivorous father and he LOVED it! It has such a wonderful after taste from the pepper flakes. I added my almonds in with the garlic and onion after reading the comments. The recipe is so simple and easy, I'll definitely be making this a regular in my house hold.

Delicious!  Instead of toasted sesame seeds I used tahini paste which added a nice texture.  Sauteed the garlic in the tahini with a little vegetable oil.  Then added the carrots and kale.  Added lemon juice and soy sauce with ground ginger and cayenne.  Almonds and raisins at the end.

Really quick recipe and super good!!!

This was pretty super!  I thought about adding lemon juice (because I love kale-lemon together), but I didn't.  I love the addition of the carrot and almond.  Next time, I might add almonds before the kale to toast them, and I would add a little water and cover to steam the kale.  I'm adding kale to my grocery list so I can make this again next week!

I only gave this 4 stars instead of 5 because there wasn't any salt. I added about a tablespoon of soysauce. I also added a little bit of water to the pan while cooking the kale and put a lid on. I skipped the almonds because I don't like them. But loved the sesame seeds!
This is my first time making kale and I love it! I bought a crinkly looking kind with reddish tint that was advertised as having "mild flavor."
If anyone is interested, I served this on top of the rice from the "Kale & Brown Rice with Kick!" on this site, which went really well together.
