Super Moist Chocolate Chip Muffins!

What you need: 

1 tablespoon ground flax seeds
3 tablespoons water
2 cups all-purpose, unbleached flour
1/2 cup white sugar
3 teaspoons baking powder
1 teaspoon salt
3/4 cup vegan chocolate chips
3/4 cup nondairy milk
1/3 cup canola oil
2 tablespoons brown sugar
3 tablespoons white sugar

What you do: 

1. Preheat oven to 400 degrees Fahrenheit. In a mixing bowl, mix water and flax seeds. Set aside. In a medium mixing bowl, add flour, 1/2 cup sugar, baking powder, salt, and chocolate chips.
2. To the flax seed gel, add milk and canola oil. Add the wet mixture to the dry mixture all at once.
3. Stir just until combined and do not over-mix. Add batter into a muffin pan and fill the tins 2/3 full.
4. Mix the last two sugars together and sprinkle on top of all the muffins. Bake for about 15-20 minutes.
They're super moist and yummy!
Source of recipe: I was in the kitchen really wanting some good old muffins, and this is what I came up with!

I put the batter in paper baking cups and now I can't get the muffins out :( They taste ok though

These are super awesome muffins, really moist and fluffy, and no one suspected they were vegan! Fave recipe by far ;)b

This are cooking in the oven right now! I omitted all the sugar and added 4 organic bananas.  They still made 12 muffins and taste sweet enough for me. Thanks again for the recipe.  It was really simple to make and smells delicious!

I can't wait to try these. I have been craving banana chocolate chip muffins and the vegan bakery I go to sells them but they are $3.75 each! It would be nice to make them at home and use organic ingredients. I would suggest turbinado sugar though instead of white since white sugar uses animal bones in the bleaching process which is disgusting!

organic white sugar is vegan. It's only the regular s ugar that filters through bone.

Yay!!! So glad you all like them so much! I think I'm going to experiment with the batter and see if I can make these CHOCOLATE Chocolate Chip Muffins!  ^-^ Heehee! I'll post the additions if I have success.

I had a pack of frozen berries thawing in the fridge overnight and I didn't know what to do with them. Then I decided to make these muffins and add about a cup of mixed berries. I omitted the extra sugar, but honestly, I don't think these needed it. Though the fruit did add sugar anyway. They baked perfectly in 15 minutes! Also... they were huge!

I used 1/2 cup mini chips
NO salt
ground black sesame INSTEAD of the ground flax
raw sugar INSTEAD of the white sugar

also, 15 minutes @ 400 in my oven...

These muffins were delicious and very moist. My omnivorous boyfriend (who is also a chef) really enjoyed them too, which is important to me. There is no "these muffins are great... for a vegan muffin." They are just simply delicious in their own right.

I think next time perhaps I wouldn't put quite so many chocolate chips in. They almost overpowered the banana flavor, which for me was the best part! However, that's just a personal preference so I still give it 5 stars. It was a successful recipe and I will definitely make these muffins again and again!
