Sugar and Yeast-free Wheat Bread

What you need: 

4 cups whole wheat flour
5 teaspoons baking powder
1 teaspoon salt
1 1/2 cup soy milk or water (I use soy milk)
1/4 cup oil
1 cup unsweetened apple sauce (I throw an apple in the food processor)
1 tablespoon cinnamon
1 teaspoon nutmeg
a little extra oil and cinnamon.

What you do: 

Preheat oven to 350 Fahrenheit.
In a large bowl, combine flour, baking powder, and salt.
In a separate bowl, combine milk (or water) and oil. Slowly mix wet mixture into dry mixture.
Add applesauce, cinnamon, and nutmeg. Mixture should be moist, but not very sticky. If it is sticky, add more flour. If it is dry, add a bit more milk or water.
With well oiled hands, drop mixture into an oiled loaf pan. Use some extra oil to smooth out the top of the bread. Sprinkle some cinnamon on top, for looks and I like to score an "X" into the top so when the dough rises it still looks good. But I may be obsessive. :)
Put into the oven for 40 minutes, Checking on it occasionally after 25.

SO HOW'D IT GO?

I just made the bread.  I used half the baking soda and left out the cinnamon and nutmeg.  It turned out pretty good...a little dense but what do you expect from wheat free bread?  It's going to be great with some homemade strawberry preserves!

i just made this and i dont reaIIy Iike it.
it has an off taste and the cinnamon seems to be out of pIace.
however it does have a nice texture, it just needs sugar or something.

Just made this.... really yummy. But I am wondering, perhaps there's a bit too much baking powder in this? I tasted a faint chemical note in it. But really, I just had a few slices of this with home made raspberry jam on it - definitely something I'd want more of if it wasn't so satisfying.
