Soft and Good Whole Wheat Bread
1 1/2 cups water
3 tablespoons oil (olive or vegi)
5 tablespoons molasses
2 tablespoons vegan soy lecithin granules
1/4 cup ground nuts ( I used pecans)
1 1/2 teaspoons salt
3 teaspoons yeast
about 5 cups whole wheat flour
In a bowl mix water with yeast, lecithin and 2 cups of the flour. Let rise 30 min. Then add rest of the ingredients mixing enough flour to make a soft dough you can knead. Knead dough till its soft looking, about 10 min. let rise for hour and shape into a loaf and put in a bread pan. Let rise till its about 2 inches about rim of pan. bake 40 min in 350 oven, covering with foil last 15-20 min. if its browning to fast. Take out of pan and set on a cooling rack. Brush with soy margarine or oil for soft crust. Very good vegan bread.
