Stuffed Peppers

What you need: 

3 cups cooked brown rice
1 medium onion, diced
1 (15 ounce) can black beans
1 (28 ounce) can tomatoes
salt and pepper, to taste
4 large bell peppers (red, yellow, or green)
1/2 cup grated vegan cheddar cheese
1/2 cup water

What you do: 

1. Preheat oven to 350 degrees F. In large bowl mix cooked brown rice, diced onion, beans, and tomatoes. Salt and pepper to taste.
2. Cut off tops of peppers and clean out the insides. Stuff with mixture. Sprinkle grated cheese on top.
3. Pour water in a shallow casserole dish and place stuffed peppers in this. Cook for 30 minutes or until peppers are tender.
This is a great maindish.

loved it! i also added  a little bit of veg*n sausage crumbles into the mix.

This is a delicious entree. I added a little of each of the following spices: coriander seed, garlic powder, oregano, and cumin. I omitted the pepper. In addition I also included Tofurky Italian Sausage which I chopped into small pieces. The Tofurky can be found at Publix Supermarket.

I really enjoyed this recipe. It would probably also be good with corn added to the mixture.
