Stuffed Pepper Soup

What you need: 

1 small onion, diced
1 garlic clove, minced
1 green pepper, roughly chopped
1 yellow or red pepper, roughly chopped
1 (14 1/2 ounce) can diced tomatoes, pureed in a food processor or blender
1/2 (12 ounce) package vegan crumbles (I use Smart Ground)
1 (32 ounce) container vegetable broth
1/2 cup brown minute rice
salt and pepper, to taste

What you do: 

1. Over low to mediam heat, sweat the onion and garlic until soft. Add the peppers and cook until fork tender.
2. Add the pureed tomatoes, meatless crumbles, the broth, and bring to a slow boil.
3. Once boiling, add the rice, cover and cook until the rice is tender; about 12 minutes. Salt and pepper, to taste and enjoy!

This soup is great! I really liked it! I get freaked out by fake meat so I just left it out but it's super yummy!  ;D

My omni parents, Dh , DD and I all loved this--I might cut back a little on the rice if I don't want it so thick and stewlike, but sometimes that is just what I'd be after.  The flavors are fabulous.  I used a roll of Gimmee lean beef flavor, short-grain white rice (it was all I had on hand) and I didn't bother to puree the tomatoes, and it was all good!  Thanks for a new addition to my permanent recipe collection!

I forgot to review this the 1st time I made it, but it is amazing! I just follow the recipe maybe adding a few spices but ti really doesn't need it!

could the dry TVP be used in place of the smart ground? we don't have any vegan ground beef subs here

Very good!
We've been craving soup recently since its been so unseasonably cold around here and this hit the spot!
I did make a few additions though.....blended some roasted red peppers with the diced tomatoes, added a full cup of rice, cayenne pepper, basil, and nut yeast....
However, I think next time I'll leave out the "ground beef" crumbles - didn't really add anything and I'm not huge fan....

I made this yesterday since both my boyfriend and I were coming down with something -- WOW. it was so good thay my non-veg mother said it was one of the best soups she has ever had, called it "beautiful", and after I left, sent me a text message saying "Awesome soup!!".  ;D I did throw in some herbs de provence and quite a bit of nutritional yeast half for flavour, half for the vitamins. SUCH A KEEPER.

Delicious! I added one more thing just to zest things up. A teaspoon or so of italian seasoning just to give it a kick. Tastes amazing. I could eat this everyday!

I live in Bulgaria and couldn't find faux meat so instead, I added more rice. Turned out just great. My boyfriend and I are big fans of this recipe. Thanks a bunch!!!!
