Stoplight Salad w/ Quinoa

What you need: 

1 cup dry quinoa
2 cups water
2 cups tomatoes, diced
2 cups corn
1 green pepper, chopped
1 red pepper, chopped
2 cups black beans
1/4 cup cilantro
3 tablespoons olive oil
3 tablespoons lime juice
1 clove garlic, minced
salt
pepper

What you do: 

1. Cook quinoa in water.
2. Mix tomatoes, corn, peppers, beans and cilantro in a large bowl.
3. In a separate bowl, stir together oil, lime juice, and garlic. Pour over veggie mix and stir. Add cooked quinoa and stir; add salt and pepper to taste.

SO HOW'D IT GO?

This makes a really filling lunch for work thats healthy, but it did not have a lot of flavor. I will make this again in the future but will tweak it a bit to suit my taste.  Its a good way to use up the last of your quina taking space in the pantry.
