Spinach Rice

What you need: 

2 cups spinach
1 cup rice
ginger
3-4 garlic cloves
2-3 green chillies (depending on how spicy u like your food)
1 large onion
1 clove (optional)
2 cardamom (optional)
oil
salt to taste
2 cups water

What you do: 

First, cook spinach with water just enough to soak it, add the chillies to this. Once the spinach becomes tender, blend it into a fine puree. In a pan, take some oil add the cardamom n cloves which add flavour to this dish, add garlic, onion n ginger, sauté till the onions colour changes to golden brown. Add the pureed spinach stir now, add rice, add 2 cups of water and salt. Stir just once and wait for the rice to start boiling once it begins to boil. Stir once again and close the lid of the pan. Stir in between, cook till rice is done, which will take approximately 20-35 minutes.

They are actually from www.vegetariantimes.com.  I thought I got it from this site, but since I didn't, I couldn't post the recipe.  If you have trouble finding the recipe, you can email me.  They were awesome, and paired with this rice, made the best meal I've had in a long time.  Even my boyfriend, an omni, raved about it! ;)b
