Spinach Dip Fast and Yummy

What you need: 

one ten oz bag fresh spinach
2 tablespoon tahini or a bit more to taste
3-4 cloves garlic minced or pressed
salt to taste
one tablespoon olive oil
lemon juice to taste (optional)

What you do: 

Saute spinach and garlic in oil until leaves are wilted and darker green. place in food processor, add the tahini and salt and puree. Taste and decide if things need adjusting or you'd like to add a spot of lemon juice. If you add, puree again to mix.
Serve warm (but just as yummy after a night in the fridge) with vegan bread of choice (pita is good), vegan crackers, fresh veggies, etc.
I've brought this dish to parties and converted life-long spinach-haters!

SO HOW'D IT GO?

:D  Oh my god I am in love!!!!  This is such a good recipe!  I did 2 bags of spinach, sauteed with about 8 cloves of garlic and 1 a jar of marinated artichoke hearts.  Then I blended everything added a whopping spoonful of tahini (smiles  this is sesame butter not the tamari that you mentioned!), and a squeeze of lemon juice.  Blended the heck out of it, poured back into the pot and added 1 c vegan sour cream!  I had a taste whoa boy it is good!  It's in the fridge now firming up a bit and am going to serve it tonight for a get together!  Excellent recipe, two thumbs WAY up!!!

I wasn't a fan of this dip. I made it for a new years party and I didn't bring it. I didn't like the tamari sauch with the spinach.
