Spicy Potato Salad

What you need: 

12-15 baby red potatoes, halved
3 scallion onions thinly, sliced
2-4 tablespoons vegan cream cheese
pinch of salt & fresh ground pepper
1/2 teaspoon paprika and 1/2 teaspoon cayenne pepper -OR-
1/2 teaspoon cumin, 1/2 teaspoon coriander and 1/1 teaspoon turmeric

What you do: 

1. Boil the potatoes until they are soft.
2. Add all of the ingredients to the strained potatoes.
3. Use a fork to coarsely mash the potatoes and blend the ingredients.
Serve warm, room temperature or cold! Enjoy!
