Spicy Curried Vegetable Stew

What you need: 

1.5 cups marinara sauce (Trader Joes is what I used)
2 TB curry power
1 teaspoon red pepper flakes, or more to taste
dash of salt, pepper
2 zucchini
1 turnip
2 cups broccoli spears
4 small carrots
8 oz frozen artichoke hearts
1 cup mushrooms (use a variety)
1 medium red onion
1 block firm tofu, cut into bite-sized cubes

What you do: 

Cut the zucchini up into fairy good-sized chunks. Do this with the carrots as well. And the onions. And the turnip :)
In a large pot, add the zucchini, carrots, onions, and turnip. To this add the marinara sauce, about 1/2 cup of water, the curry powder, the red pepper flakes, and the salt/pepper (to taste, really). Bring to a boil (put the lid on the pot. Let this cook on a medium flame for about 10 minutes. Add the rest of the veggies and the tofu, and continue to cook for about 10 more minutes.
This is really good served over fettucine noodles, or brown rice.
Enjoy :)
Variation: Add some coconut milk (1/4-1/2 cup?), it tastes yummy as well :]
