Spiced Poached Plums

What you need: 

2 cups sugar
peel of 1 lemon
juice of 1/2 lemon
3 cloves
5 star anise pods
1/2 tablespoon black peppercorns
2kg (kilograms) washe'd plums

What you do: 

1-Bring all the ingredients except plums to boil with 1 litre water. Boil for about 10 minutes.
2-Add plums, reduce heat, cover and simmer until plums are soft - about 10 to 15 minutes.
3-Chill and serve with vegan yogurt, vegan ice cream and what have you.

SO HOW'D IT GO?

I halved this recipe and used blue Claudine plums. I used panela (whole cane sugar) and cut way back on the amount to allow the fruit's natural sweetness to take over. 3/4 cup of panela was plenty for me. It came out very nice.

I cut my plums into bitesized pieces before cooking so I did not have to worry about the pits.  I also used dark plums from my tree which were really ripe and sweet before cooking so it came out plenty sweet for my tastes. The cooking time was spot on for me.  Cooking the fruit in the sugar will help preserve the shape instead of it coming out as mush.

It is an excellent combination of spices for the plums.  I tried it on yogurt and liked it.  I am looking forward to using it on my oatmeal for breakfast.

i waited 10 more minutes for plums to break apart so i could remove pits with a teaspoon.

my plums were too sour so this tasted like cranberry sauce to me.
spices are ok i guess.  ;)
