Spiced CousCous Salad

What you need: 

1 teaspoon olive oil
2 cloves garlic, minced
1 tablespoon curry paste or powder
1 cup couscous
1 cup water
1 small bunch coriander/cilantro, chopped finely
1 medium carrot, grated
2 medium capsicums/peppers, diced finely
3 medium sticks celery, diced finely
1 medium continental cucumber, diced
1 red onion, diced finely
1/2 cup peanuts (whole)
juice of 2 medium lemons =or= 1/2 cup apple cider vinegar

What you do: 

1. In a saute pan, heat olive oil. Add and saute garlic and curry until fragrant, adding a bit more oil if using curry powder.
2. Add couscous and heat until couscous begins to brown.
3. Add water, remove from heat, and cover for 5 minutes. Cous Cous should be fluffy and expanded. Fluff with a fork and leave to cool while preparing other ingredients.
4. Once couscous is cooled (but still a bit warm), combine with remaining ingredients. Serve.

SO HOW'D IT GO?

This recipe took awhile to put together but was ohhhh, sooooo, worth it!  Yum!

I made this minus the red onion and cilantro since I didn't have them on hand.  It's crazy good as is, but I'm sure it would ROCK if I had those last couple of things.  I'll definitely make this again--it's a hit with my fiancé.
