Spaghetti Pie
1 box of spaghetti noodles (16 oz)
1 box of frozen spinach, thawed and drained
1 jar of Classico spaghetti sauce
I medium onion, diced
1 cup of grated soy cheese (preferably mozzarella)
3 - 4 thawed vegetarian burgers...(we use Boca Burgers)
1 clove garlic, diced
2 tablespoon soy butter
Boil noodles until tender... drain, mix with soy butter and 1/2 cup soy cheese and press into bottom of a 10-12 inch. greased casserole dish.(We use a round one to look like a pizza). Bake at 350 F. for 10 minutes. While in the oven, prepare the sauce for your topping. Saute onions and garlic..adding crumbled boca burgers and spaghetti sauce. Let simmer 10 minutes. Take spaghetti pie out of oven. Place this mixture on top of the baked spaghetti and top with remaining 1/2 cup of soy cheese. Place back in the oven and bake for an additional 30 minutes, or until sauce begins to bubble. Remove from oven. Let cool for 5- 10 minutes to allow the pie to settle. Cut like a pizza.
Serve with salad and garlic vegan bread. This is delicious! Enjoy!!:)
