Southern style black-eyed peas

What you need: 

1 package dried black-eyed peas
1 small sweet onion
1 tablespoon salt (more or less)*
1/4 teaspoon ground black pepper
1 packet Sazon Goya seasoning (con Culantro y Achiote) OR 1 teaspoon Seasoned Salt
1 cube vegetarian vegetable bouillon

What you do: 

*I like my peas salty, but if you don't like yours that way, you may want to reduce the amount of salt you add. Or, if you LOVE salty southern food, go to town with the salt!
Follow directions on the bag of dried peas for softening. (usually soaking over night or boiling and soaking for an hour).
Once peas are soft, put them in a large pot. Fill with water until peas are covered by about 1" water. Dice the onion and add to pot along with bouillon, salt, pepper, and seasoning packet (or seasoned salt). Bring to a boil, reduce heat and simmer for approximately 30-40 mins, depending on how mushy you like your peas, stirring occasionally.

It's a pound of peas in the pkg., 16 US ounces, so like 2 cups of peas ;)b

I want to try this, but I'm not sure how much is in a package of black-eyed peas. I just buy mine in bulk from the store. Any suggestions? (I'd prefer measurements in cups, since I don't have a scale to weigh out ounces  :()

i made this without the added salt and using seasoned salt.  it was my first experience making black eyed peas and i thought it was pretty good!
