Sloppy Joes with a kick
1/2 cup dry lentils (I used green)
1 1/2 cups water
1/2 cup ketchup
2/3 cup frozen peas and carrots (cook longer if fresh)
2-3 tablespoons brown sugar
2 tablespoons vegan worcestershire sauce (Wizard's Organic is good)
1/2 cup diced tomatoes and green chilies (I use Rotel)
1/8 teaspoon celery seed
1/2 teaspoon minced onion
1/4 teaspoon chili powder
1/4 teaspoon onion powder
1/4 teaspoon ground mustard
1 tablespoon cornstarch, optional
1. Simmer lentils in the water with the lid 1/4 off the pot for 15 minutes, until almost cooked. There should be a splash of water left in the pan.
2. Add the rest of the ingredients (except the cornstarch) and heat through for 5-10 minutes.
3. Add cornstarch, to reach desired thickness. I find 1/2 cup is plenty for a sloppy sandwich.
Source of recipe: I came up with this recipe when trying to create a low-cal sloppy joe and playing around with lentils. It's super easy and it's much better for you than the canned sloppy joe sauce (even though I do love that stuff).
SO HOW'D IT GO?
OOO....I did not use cornstarch at all. Kept the lid off and let it thicken naturally.
I made these last night for Father's Day for my husband. I followed the recipe exactly. It was a big hit! I was glad to find a sloppy joe recipe using beans. Thanks JeLMo21!!
