Slightly Spicy Couscous Salad

What you need: 

Half a cereal bowl of un-cooked couscous
Boiling water, enough to cover the couscous
Salt and pepper
1 1/2 tbsps of dried or fresh mixed herbs
3/4s teaspoon of curry powder or whatever strength you desire
1 tablespoon of light soy sauce
1 tablespoon of tomato puree
assortment of vegetables (fried onion, pepper, peas, carrot, beans,
sweetcorn...work best)
1 1/2 tbps olive oil or vegetable/sunflower oil

What you do: 

Cover the couscous with the boiling water and leave to swell. Meanwhile prepare the vegetables you wish to add to the dish. Note you do not need that many. When all the water has been soaked into the couscous, move it to a larger bowl and comb it through with a fork. Add oil, salt, pepper, herbs and curry powder to the couscous and stir in well. Next add the soy sauce and again stir. Add the tomato puree and make sure you mix this in well as it has a tendency to stick in large lumps. Finally mix in the vegetables. Taste and add more seasonings if desired. Serve with salad, lentil dal....
