Simple Black Bean Quesadilla

What you need: 

2 cans black beans

1-2 cups whole wheat rice

1 can corn

Diced tomatoes

4-6 multi-grain tortilla wraps

1 teaspoon chilli powder

1/2 teaspoon garlic powder

2 tablespoon canola oil

What you do: 

1) In a medium sized fry pan combine the canola oil, chili powder, and garlic powder on low heat. Then add 2 cans, drained, of black beans. Cook the beans until they are soft. With a potato masher, mash the beans completely.

2) Cook the rice however you want to. I happened to have 2 bags of rice that I cooked in water on the stove.

3) Heat the corn

4) Spray a small fry pan with cooking spray, and once the pan is heated warm the tortillas on each side for 15-20 seconds.

5) Spread the refried beans on one side of the tortilla, then add the rice, corn, and tomatoes on top. You can eat these plain or add your favorite sauce on top!

Side note: I cooked all of the ingredients simultaneously, so the order of steps 1-3 doesn't really matter.
