Scallion Cakes
1 cup all purpose flour
3/4 cup water
2-3 stalks of finely diced scallions
salt
canoloa oil
soy sauce or tamari for dipping
In a food processor combine flour and water until a ball of dough forms. (This can also be done in a bowl by hand.) The dough should be the consistancy of vegan bread dough. If it crumbles, add more water. If it sticks to your hand, add more flour. Divide dough into three or four sections.
Take a section and flatten it into a pancake. Lightly oil top of pancake (a few drops spread with your fingers works best.) Lightly salt the pancake. Fold pancake into thirds. Keep folding the pancake into itself (this is what makes it flakey.) With a rolling pin, flatten pancake and sprinkel liberally with scallions. Fold the pancake several times again and flatten again with a rolling pin. Repeat process with other dough sections.
Heat aproximately 1 tbsp. of oil in a skillet, lightly salt the cakes again and fry until slightly browned.

i have never ever (in 10 years!) met anyone
outside of alberta who knows what these are...
they're usually called green onion cakes here
and we eat them with sriracha chili sauce!
