Savory Quinoa with Corn and Peas

What you need: 

1 cup uncooked quinoa
2 cups water
2 tablespoons vegan butter
1 (1 ounce) package onion soup mix
1/3 cup frozen corn kernels
1/3 cup frozen peas

What you do: 

1. Combine quinoa, water, butter, and onion soup mix in a medium sized pot and bring to a boil over high heat.
2. Add corn and peas, mixing to combine. Reduce heat to low, cover, and simmer for 22-25 minutes, or until liquid has absorbed and quinoa is fluffy.
Source of recipe: I came up with this recipe to include quinoa and other veggies. They are all so good for us I wanted to put them together in a way that is tasty!

SO HOW'D IT GO?

Made this last night with mixed vegetables instead of just corn and peas and everyone liked it! I thought it was a little too onion-y but no one else seemed to.
