Sauteed Veggie Guacamole Salad
Sauteed Vegetable Guacamole Salad – Serves 2
1 Romaine Lettuce
½ Tomato Thinly Sliced
1 White Onion
8 Mini Sweet Peppers or 2 Cups of Assorted Bell Peppers Sliced
1 Serrano Pepper. ~ ½ should be seeded and the other half the seeds should be left intact.
5 Cloves of Garlic ~thick slices
3 TBS Vegan Butter Spread (I use Earth Balance)
Salt, Pepper, Garlic Powder To Taste
5 Purple Cabbage Leaves Sliced
Creamy Guacamole Dressing
3 tbsp Olive Oil
1 Medium Avocado
3 Green Onions, white part only and very finely chopped.
½ Lemon
½ Serrano Pepper, with no seeds and very finely chopped.
2 tbsp Vegan Mayo
Fresh Ground Black Pepper
Salt and Garlic Powder, to taste
1/3 Bunch Cilantro, leaves cut very finely
Smoked Paprika, to taste
A Few Dashes of Lemon Pepper Seasoning
Chili Powder, to taste
1. Melt the butter spread in a medium size pan. Add sliced onion and garlic and sauté for about 5 minutes. Next add the sweet/bell peppers, Serrano pepper with seeds, and purple cabbage. Continue to sauté veggies until the onion is almost clear all the way through.
2. While veggies are cooking slice romaine lettuce and tomato and divide into two equal portions.
3. Once veggies are done spoon over tomato and lettuce.
