Sausage Crumbles

What you need: 

2 tablespoons soy sauce or Tamari
1 teaspoon sage
1 teaspoon onion powder
1/2 teaspoon thyme
1/4 teaspoon garlic powder
1/2 teaspoon fennel seeds
1/8 teaspoon cayenne pepper
1/8 teaspoon black pepper
salt, to taste
1 cup boiling water
1 cup textured soy protein
2-3 tablespoons extra virgin olive oil

What you do: 

1. In a bowl, mix together the first 9 ingredients (through salt). Pour the boiling water over the mixture.
2. Pour in the textured soy protein, mix with a fork, and let stand for 10 minutes. Fluff with a fork. Taste to see if more seasonings need to be added.
3. Put oil in a frying pan over medium heat. Add mixture, and fry until well browned. (you may need to add extra oil if the pan becomes too dry).
You now have delicious sausage crumbles! They taste great on pizza, in spaghetti sauce, and with scrambled tofu eggs.

SO HOW'D IT GO?

These crumbles are AMAZING!!! Taste just like sausage too (Do not leave the fennel seeds out)! I have had these crumbles on delivery pizza (Just sprinkle warm crumbles on your hot pizza), tofu scrambles, and stuffed peppers so far... I will be making these often they are soooooo good!

Last time I tried a recipe with such rave reviews I was really disappointed so I wasn't expecting this one to live up to the hype. But WOW, they were perfect! I added some regular all purpose flour so they held better as "balls" when I fried them up, but other than that I followed the recipe to a T. I shoved a nugget in my omnivorous hubby's mouth an he was speechless which NEVER happens with vegan food. I put it on my pizza, its exactly like the sausage they use at all the pizza joints I've been to! This has quickly become my new favorite sausage recipe. Its CHEAP and really good. LOVE IT!

A great, easy way to make "sausage."  Our kids never knew the difference!

This recipe is really creative! It's pretty tasty, too. My boyfriend walked in and said "Smells like we're having something yummy tonight!" The spices smell amazing. This sounds silly, but it smelled like I remember Pizza Hut smelling like when I went there as a kid. I'm serious!

I didn't have sage, so I used half teaspoon marjoram, half teaspoon oregano. I also didn't add any extra salt. Instead of the cayenne, I added a half teaspoon of crushed red peppers. We were going to put it on pizza, then we switched it added it to a black bean/mushroom/rice/salsa concoction. Very yummy. My bf has also put extra crumbles on top of tofutti on top of his bagel.

yeah I'm trying to avoid the oil.... I figured if I bake them a quick spray of nonstick spray could do the trick...

In that case, I would bake them low and slow.

You could certainly bake them. The question is, are you trying to avoid the oil? I would still drizzle oil on them when baking because it makes them more sausage-y. I think I gave up on tvp crumbles in the past because I never thought to fry them in oil (or probably anything in oil) then. Now that I am full-fledged vegan, I do not fear the oil. It makes the hair shiny and the skin so soft. Make food yummy!!
