Vegan Welsh Glamorgan Vegetable Sausages
2 cups fresh bread crumbs
2 tablespoons finely chopped leek
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh marjoram
1 tablespoon coarse-grained mustard (use a little less if you are just using powder mustard)
2 eggs equivalents, prepared
freshly ground black pepper, to taste
olive oil, for frying
1. Mix bread crumbs with the leek, parsley, marjoram, mustard, egg replacer, and ground black pepper to taste. Mix until it all comes together. Form about 8 sausage shapes.
2. Heat a fry pan with a little olive oil and carefully pan fry four sausages at a time until they are golden brown. Put on paper towels to soak up the oil. Serve and enjoy.
Note: Glamorgan sausage is a traditional Welsh recipe that happens to be vegetarian! Its technically not a sausage, but oh well thats what its called. Glamorgan sausage traditionally has Glamorgan or Caerphilly cheese. You can choose to add a cheddar style vegan cheese to this, but I think its delicious without. Serve this at your next Cymanfa Ganu or as a savory breakfast side, appetizer or even as a entrée!

SO HOW'D IT GO?
This was great. I didn't have a leek or parsley so I used a shallott just left out the parsley (will get some for next time) A little drop of liquid smoke too. Fennel, because I like fennel. Sage because I think of sausage with sage. I think you could change this recipe to suit whatever your tastebuds call for. I used an ice cream scoop and scooped it onto some bread italian bread crumbs (since it had a bit of parsley in it) and then just fried it with pam. I will be using this receipe again.
