Ridiculously Good Quick and Easy Black Bean Filling

What you need: 

15oz can of black beans drained and rinsed
2 chipotle chilies in adobo sauce seeded and chopped
2 tablespoons brown sugar
1/2 cup frozen corn thawed in hot water
diced white onion (optional)
chopped cilantro (optional)
your favorite vegan Mexican "cheese" (optional)

What you do: 

In a blender or food processor add the beans,chipotle chilies and brown sugar. Blend until smooth. You can leave the mixture chunky if you like - my 2 yr old loves this but won`t eat it if he can see any beans in it!
Heat a non stick pan or griddle on medium-high heat. Spread the bean mixture on a tortilla. Top with corn, white onion, cilantro and cheese if using.
If you are not using the veg cheese, I would recommend spreading a thin layer of the bean mixture on the top tortilla to adhere it to the bottom tortilla which will make it much easier to flip while cooking.
Cook until heated through about 3 minutes each side or as crispy as you like your tortillas.
