Rich Chocolate Cake

What you need: 

1 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons cocoa powder, unsweetened
1 cup Turbinado sugar
6 tablespoons canola oil
1 tablespoon apple cider vinegar
1 teaspoon vanilla extract
1 cup very cold water

What you do: 

1) Preheat oven to 350 degrees Fahrenheit. Sift flour, soda, salt, cocoa and sugar into bowl. Put over the dry mixture the oil, vinegar and vanilla. Over this, pour the cold water. Mix well. Let the mixture set for about 5 min to allow the sugar melt. Stir briefly. 2) Bake in a 8" or 9" pan for 20 to 30 minutes, it is done when a toothpick or cake tester comes out clean. It is very moist.
At 180 cal a slice, it is obviously not for the dieter!) This will keep for several days - I keep it in the fridge. Use a 9"x13" pan if doubling, and lengthen the cooking time by 5 to 10 minutes.
Source of recipe: This is a family recipe going back to the '50s. I saw a similar recipe a few years back in a southern cookbook.

SO HOW'D IT GO?

Adding coconut milk instead of the oil and some of the water, adds a nice richness and flavour also.
