Refreshing Summer Skillet

What you need: 

1/4 block extra-firm tofu (NOT NOT NOT silken)
1/2 cup prepared garbanzo beans
2 Roma tomatoes, coarsely chopped
1/4 coarsely chopped fresh sweet onion
1/2 cucumber, coarsely chopped
few drops sesame seed oil
1/2 teaspoon olive oil
1 tablespoon balsamic vinegar (or more to taste)
few dashes dried dill
few dashes garlic powder
few dashes chili powder
few dashes turmeric

What you do: 

Super simple!
Squeeze water out of tofu and crumble into pan. Add olive oil, sesame seed oil, vinegar (everything except veggies and spices). Stir-fry until very hot and, if you like, golden brown. It will probably look a little dry at this point.
Add tomatoes (WITH JUICE!), Seasonings and onion.
Cook until tomatoes are softened (but NOT falling apart) and onion is almost translucent.
Add cucumber. Mix together until it is warm, but not cooked!
Enjoy while hot!
This is super refreshing. I think I would make this if i lived in Hawaii or by the ocean, and eat it outside for breakfast with a mojito, some whole grain toast with jam, and an orange. Or if I just had a patio, I would as well.
