Raw Vegan Keen Green Bars

What you need: 

2 cups raw sunflower seeds* (soak in 1/2 cup water, stir, and let sit overnight.)
1 whole red pepper take out stem and seeds*
1 healthy handful washe'd baby spinach*
1 bunch parsley- about 10 stems with tops*
2 heaping teaspoons Paprika*
1 1/2 teaspoons sea salt*
1 teaspoon minced garlic*
1 big leaf kale. stem and all*
2 stalks celery* and 1/3 medium onion*
1/4 teaspoon chili powder*
1/2 teaspoon coriander*
3/4 cup rice bran to thicken (optional)*
* All ingredients should be Organic, Raw, and Non Radiated

What you do: 

Combine all ingredients in food processor. Blending is easier if you start with the veggies, add spices etc., then sunflowers (undrained) last.
Make patties, or bars out of combined mixture. make them as thin as you can (rolling pin optional).
Place in food dehydrator and dry for 12-24 hours (or until dry). Turn patties after 6 hours.

SO HOW'D IT GO?

So two things. One: if you use a cookie sheet in a low temperature oven, definitely spray the sheet with a non-stick cooking spray first! I now have Keen Green Granola :(

Also, if you use the low temperature oven, definitely wait a full 5 hours. I got antsy at 2 hours and they were quite chewy.

All that being said, as spinach-y snacks go, this had the kickin' garlic, and the hint of hot pepper that made it flavorful!
