Raw Comfort Taters

What you need: 

1 head cauliflower
2 tablespoons olive oil
1 1/2 tablespoons raw nut butter
1 teaspoon salt, or to taste
Water, as needed

What you do: 

This is SUPER easy and it really sticks to your ribs!! I eat this all by itself!! It keeps well for a few days.
1) Place all ingredients in a the bowl of a food processor. Pulse and chop all ingredients for a minute. Continue processing until smooth. Add water, if needed, to adjust consistency.
Serve with your favorite raw gravy. My favorites are mushroom gravy or make up your own! Also, you can add nutritional yeast with red pepper for cheesy taters! Enjoy!

This recipe was my first step towards a raw-ish lifestyle, and I was not disappointed at all. I used peanut butter as it was the only nut butter I had around, and I added in one clove of garlic and some ground flax seed. Very good, but like the other person said, if you don't like cauliflower, this is still cauliflower...just in a creamy form. No gravy needed :)


This was the perfect way to use up the mondo head of cauliflower i had in the fridge  ;)b
I used raw tahini for the nut butter, and added a clove of garlic and some rosemary to mine. It goes great on bell pepper slices! :D


I tried this because it seemed like such a different way to have cauliflower but I hate to say if if your not a fan of cauliflower, this recipe still doesn't change the fact that it is indeed cauliflower.  Oh well my picky carniverious friend ate some and liked it so I am defiantly not knocking the recipe itself.  However I am a fan of broccoli and I will try this out with broccoli because everything is more fun mashed. he he


Very creamy just like mashed potatoes! 

I used tahini instead of nut butter.  Next time I would add some garlic and some nutritional yeast into the mix to make garlic-y, cheese-y mashed potatoes.
