Rainbow Salsa (Raw)
8 red medium tomatoes, chopped
3 very ripe mangos, chopped
2 red onions (Red only), chopped
I bunch cilantro, chopped
2 jalapeno, chopped
3 or 4 big garlic cloves, chopped
3 tablespoons sea salt + fresh grounded black pepper
juice from 2 limes
2 or 3 avocado (MAKE SURE THIS IS PUT IN LAST)
1. Mix tomatoes, mangos, onions, cilantro, jalapeno, and garlic in a big bowl.
2. Sprinkle in the sea salt and pepper.
3. Juice the limes in.
4. AND THEN put in in the avocado.
5. Fold ingredients together.
(Put the avocado in last because you don't want to smash the avocado in with all the other ingredients, because then you don't get the yummy peaces.)
The longer you let the salsa sit in the fridge the BETTER it gets. The next day it is SOOOOO good. (If it even lasts that long) ENJOY
