Radicchio Slaw

What you need: 

1 1/2 cups radicchio, shredded or chiffonade cut
1 cup carrots, shredded
1 cup apple, shredded
1/2 cup beets, shredded, optional
1 tablespoon balsamic vinegar
1 tablespoon lemon juice
3 tablespoons extra virgin olive oil
1/2 teaspoon salt and pepper

What you do: 

1. Mix the shredded ingredients.
2. Add seasonings, taste and adjust, if needed.
The apples balance the bitterness of the radicchio, the carrots and beets add color and crunch. This is fast, easy, tasty, and nutritious!
Source of recipe: My creation as I try to use the radicchio that my garden is over producing.
