Rachael Cates Tortilla Dream

What you need: 

1 cup rice (I like white but yellows cool, yo)
3 tablespoon vegan butter
broccoli (as desired)
1 can of baby corn
1 can of artichoke hearts
1/3 block of firm tofu
sliced mushrooms
soy sauce
other seasonings
flat flour tortillas
shredded vegan cheese (mozzarella)
olive oil

What you do: 

Put 2 cups of water in coverable dish on stove to boil.
Add 1 cup rice when boiling.
Stir & cover & set stove to low.
Leave for half an hour, or until soft, mixing in butter substitute.
Put flat stir fry pan on stove at medium to low temp. & add oil.
Chop tofu into cubes (after preparing it as desired (squeezing out all moisture and freezing/defrosting) and throw into pan first.
Chop broccoli, baby corn, artichokes, and mushrooms to desired size and after the tofu ha started to brown, throw those in too.
Mix in stir fry pan often, adding soy sauce and seasonings.
When finished, dump into container and mix with rice, stirring thoroughly, adding soy sauce.
Place tortilla flat on plate, add as much shredded cheese and rice mixture a you like, roll, and enjoy!
