Quite Possibly the Most Delicious Roasted Vegetables

What you need: 

1 big parsnip, cut into thirds, then long strips
1 big carrot, cut into thirds, then long strips
1 big leek, cut into thirds, then long strips
1 onion, chopped
6 cloves garlic
2 tablespoons olive oil
2 tablespoons thyme
balsamic vinegar, to taste

What you do: 

1. Preheat the oven to 400 degrees F. Put all veggies into a pan with the oil. Evenly try to coat the veggies.
2. Add thyme and mix it up. Pop it in the oven for about 1hr-90 minutes. Check on it once in awhile. Make sure it doesn’t stick to the bottom of the pan.
3. The leeks are best when they are burned a little. If you try to double the recipe, be careful that all the veggies cook fully and the leeks get a little burnt. That means a lot of time increase.
4. When it's done, just drizzle the vinegar on it, stir it up, and voila! A fancy dinner with minimal effort!

SO HOW'D IT GO?

This tasted very good!!  I had never tried parsnips and wanted to do some roasted veggies.  I didn't have leeks, but just used 2 onions, quartered.  I was also nervous about using the balsamic vigegar, but sooooo glad I did.  I added potatoes because I was feeding several people.  GREAT tasting!!!
