Quick Veggie Sandwich

What you need: 

I eyeball everything, so use more or less of these to your liking:
about 1/4 of a red bell pepper
about 1/4 of an onion
1 clove of garlic, sliced
a handful of baby carrots, sliced into small strips
a handful of bean sprouts
oil (I always use extra virgin olive oil, but it's up to you)
Italian bread (or other crusty bread)
your favorite dressing/condiments

What you do: 

First, slice the veggies, besides the garlic and bean sprouts, any way you want. I slice the pepper into strips with the carrots and slice the onions into small pieces.
Sauté the veggies in some oil for about 5 minutes.
Slice bread lengthwise, so it folds open like a book and put your veggies on it. You might have to take some of the inside of the bread out, or the veggies might not fit.
Add the dressing/sauce that you want. I use some for dipping too.
That's it! It gets a little messy, so be sure to use a plate and have napkins. :D

I just noticed, I accidentally said not to slice the garlic, but you definitely need to do that! ;) Heh, sorry!
