Quick 'n Easy Veggie Cream cheese rollups

What you need: 

1 package (8 count) flour tortillas (I like the tomato basil)
1 (8 ounce) tub vegan herb cream "cheese"
1 can (2.25 ounce) sliced black olives, drained
1-2 cucumbers, peeled and chopped
1 tomato, diced
salt and pepper, to taste

What you do: 

1. Spread vegan cream cheese liberally (though not too thick) on the tortilla.
2. Sprinkle black olives, cucumbers and tomatoes on one side of the tortilla.
3. Sprinkle salt and freshly ground black pepper, to taste. Starting with side that has the goodies, roll it up like a log, as tightly as possible.
4. Slice into 1" pieces.
Enjoy!
Alternative 1: use Vegenaise instead of cream cheese, and sliced veggie meats, lettuce and tomato, Alternative 2: Use hummus instead of cream cheese. Add black olives, tomatoes, etc, Alternative 3: Use peanut butter and jelly. I make these sometimes for my kids' school lunch.

SO HOW'D IT GO?

these are awesome! so simple and easy - i can't believe i didn't think of making them before.

i used plain tofutti and sprinkled some various seasoning in it. added fresh asparagus, bell peppers, onions and carrots.

this is definitely a new lunch staple.

I rocked these for a Christmas party I had to go to last week.  Everyone there loved them and were gone in no time!  I don't know if I'd ever just make these for myself, but for a mixed group at a party they were perfect!  Thanks!

This makes such an easy snack or appetizer.  I will certainly make these again.  I only had plain "cream cheese" so I just added some oregano, parsley and turmeric.  YUM!

heh mine didn't turn out nearly as nifty looking, but they were still highly edible. I added sweet chili sauce to my plain tofutti cream cheese.

;)b these were good... i added lots of extra veggies... julienned carrots, red cabbage, bell peppers, red onion, sprouts... avocado would have been awesome but mine weren't ripe :( i used regular "cream cheese"... great recipe thanx!

I made these for my daughter and she really enjoyed them.  I added some alfalfa sprouts and a bit of red onion.  Also, I only had plain Tofutti cream cheese so I used that and sprinkled it heavily with Greek oregano.
