Quick Chickpea Curry Wraps

What you need: 

1 tin green beans
1 tin crushed tomatoes
1 tin butter beans (optional or mushrooms)
1/2 teaspoon ginger
1/2 teaspoon masala
1/2 teaspoon hot curry powder
1/2 teaspoon turmeric
1/2 teaspoon chili powder
1 clove garlic
1 onion (a tin is good too)
1 tin water
1 teaspoon salt
1 tin chickpeas

What you do: 

In olive oil gently fry onion, garlic and ginger. When soft add dry curry spices and further fry for a minute.
Add remaining ingredients allow to simmer for 15 minutes or until soft, stir often.
Serve in a wrap with a green side salad.
For kids : Add any fruit chutney instead of the curry power and spices...yum yum!

SO HOW'D IT GO?

Really Really Really GoodSmile Just made this for the first time, with minimal adjustments. I like masala, but the 1/2 tsp was too much for me and my husband. So I eneded up adding two more cans of green beans, some extra crushed tomatoes, and some left over edamame that I had from the day before, and a little extra curry powder, and it turned out perfect. Also, I'm not sure what a "tin" is....but I assumed it meant regular 14-15oz can, so that's what I used for a "tin". Also, I did not add the water. Will definietly be making this again.

  ;)b  I found this to be surprisingly good! I needed a quick meal and had some tomato wraps on hand. I threw in some ripe olives and a handful of raisins just for fun. I took one wrap, arranged a bed of leafy greens on it and then put the chickpea curry on top. Then I folded it up and had a really good and satisfying meal with just a few minutes of prep. Thanks for this idea!
