Pumpkin Chocolate-Almond Cookies

What you need: 

3/4 cup flour

1/2 cup rolled oats

1/4 cup sugar (I use about half of this, but I prefer less sweet deserts)

1/2 tsp. baking powder

1/4 tsp. salt

1 tsp. cinnamon

1/2 tsp. nutmeg

1/4 tsp. ginger

1/4 cup maple syrup

1/2 cup unsweetened pureed pumpkin

1 tsp. vanilla extract

1 tsp. almond extract

1 1/2 tbs oil

vegan chocolate chips (just wing the amount-to me, the more chocolate the better)

almond slices (again, just wing it.  It depends on preference.)

What you do: 

1) preheat oven to 350°

2) Combine all ingredients EXCEPT FOR THE ALMONDS AND CHOCOLATE CHIPS in to a bowl. 

3) Fold in chocolate chips and almonds.

4) roll cookies in to balls and place on a non greased cookie sheet.  (you can flaten them out if you want to)

5) bake for about 12-17 minutes, depending on how well your oven works.
