Puffy Fry Bread! (super easy!)
1 cup all purpose flour (plus extra four kneading)
1/4 teaspoon salt
1 teaspoon baking powder
1/4 cup powdered soy milk
3-4 tablespoons warm water
canola oil, as needed for frying
1. Sift together flour, salt, baking powder, and powdered soy milk. Add warm water, little by little, until you have a thick dough.
2. Knead with hands on floured surface until dough is consistent and not sticky. Cover and let rest for 1 hour.
3. Break off pieces of dough and form into thin patties aout the size of the palm of your hand. Meanwhile, heat up about 3" oil in a pan over medium-high heat.
4. Put a match in the oil, when it ignites the oil is hot enough. Fry 1 or 2 at a time. Large bubbles should form in the bread, making them look like bread puffs.
5. Turn them over so they are golden brown on both sides. Cool on a plate covered with a paper towel and enjoy!
These little snack breads are delicious when served with black beans, fried TVP, etc. If the bubbles are big enough, you can tear off the end and stuff them with whatever you want!

SO HOW'D IT GO?
These are really good, I make them all the time! Over where I live, they are known as bakes and a tsp of sugar is added along with the other ingredients listed here. I dont use the powdered milk either and they turn out great! Good breakfast with some hot cocoa or coffee. The trick is to knead the dough well and dont let the oil get too hot.
Flatbread is so yum, but there is a much safer way to figure out when the oil is ready. Take a wooden spoon (not bamboo) and put the handle in the oil. If it starts to bubble, then the oil is ready. ;)b
That sounds like a good trick too! I know putting a match in the oil sounds dangerous, but its really quite safe. The fire flares in a very small flame for a split second then burns out quickly. However, it makes a distinct sound that tells you the match just burnt.

I'm not sure what the texture would be like if you baked them, I'm sure it wouldn't get as bubbly but it might be ok! Let me know how it goes if you try! Otherwise, good luck on the recipe :)
