Pretty Easy Bean Dish

What you need: 

1 or 2 tablespoons olive oil
2 cloves minced, garlic
1 medium sized onion sliced
2 cans mixed beans or 1 bag frozen mixed beans
1 can tomato sauce or chopped tomatoes
frozen or fresh kale or spinach (about the equivalent of a bunch)
few shakes hot pepper sauce or a pinch of red pepper flakes
a splash of vinegar (optional)

What you do: 

1. Heat the oil and sauté the garlic and onion until just translucent.
2. Add the beans and tomatoes and stir together. Let cook for about 10 minutes.
3. Stir in the greens and add a few shots of hot sauce or a pinch of red pepper flakes. Add vinegar if using.
4. Simmer until greens wilt and dish is warmed through.
Good served with rice and/or cornbread.

SO HOW'D IT GO?

Yeah, so I don't know what my freaking problem was..but, I had issues making this! It had nothing to do with the recipe..but for some reason, my rice took over 2 hours to cook! Agh! Anyway, I made like a Mexican style rice, then added everything else to it. I also cooked my kale too much...but it's still tasty and healthy.
